Pretty big question I know, but I would like to learn what others know in case I'm wrong. So far, my assessment goes like this:
English are good casters
Venetian might be good with sewing (?)
Dutch have cooking
Portuguese also have cooking (?)
French have handicrafts (?)
Only French can obtain the recipe books for tannery secret. Other than that, I'm really not sure.

U can also buy any book from players of x nation if its a nation locked invest.
Some nations have a better start but that about it once u hit say rank 6 it less about nation and more about cargo size and po2s/how much u can buy.
cooking casting hc can all be done ine eu with out ever leaving sewing on the other hand i think it was from r5 or has a lot to do with india..But that may be getting off topic some.
Better starts from what i know.
casting both eng and dutch
Sewing venice dutch
cooking dutch but with Mysterious spices that give +5 ranks at any rank any nation is fine for starting
handcrafts i dont think any nation really has a 1 up on any other for starting out
I would say English and Dutch have the biggest advantage over any other nation to start with, mainly because you can start with Oxford as soon as you're levels 5/5/5. This helps your character grow much faster.
With that said I'd have to admit England is best for casting, with Dutch or Spain as a 2nd choice. Choosing Spain also depends on what you intend to cast, as you'd be more limited for types of supplies. The ports of interest are:
England
- Plymouth
- London
- Dublin*
- Manchester* (lumber)
Dutch- Hamburg*
- Lubeck*
- Bergen* (lumber)
- Oslo* (lumber)
- Amsterdam (iron)
Spain- Seville (if using firearms trade)
- Barcelona
* notes this port can be invested by any nation, though the nation it's listed under has better chance at controlCasting farm : Diago Garcia
Handicrafts I found was easiest to rank in France (Barcelona mainly) or Spain (Valencia). If you intend to do casting as well then just go by the casting list, since you can rank a good amount from bronze (bronze statues). While you can only get Brewery Secrets 2 book early from France, you can get it later from Havana as well.
best Handicrafts farm: Saint Lucia (for veg oil and large leaves)...though any would help
Starting with Venice does have it's advantages for Sewing, though I hate starting there. I find Dutch have the greater advantage later anyway with a natural influence over Oslo, Bergen (sheep), and Bremen (fur). England is another good choice as previously stated. I would STRONGLY suggest getting your farm started ASAP at Savaii if starting sewing as a solo craft or paired with handicrafts. No other farm can produce Silk Thread + Flax + Sisal (farm plot) and Wool (ranch plot).
Cooking...really doesn't matter where you start. This is by far the easiest craft to rank with use of Mysterious Spices. All you need is Livestock Secrets - pigs book from Porto and a lot of pigs to get to r7 (pigs->pork->ham/bacon), then Secret Caribbean cuisine book from Santiago/San Juan to make Salted fish with nuts (r12 recipe...r7+mysterious spice).
best farm: Saint Lucia (tuna)...though I wouldn't choose this farm based on cooking. Berries are more important and any farm can produce them.
As others have already stated, in the long run it doesn't matter where you start. Everything I listed above pertains to early-mid game. What hasn't been stated, where you get your farm and what plots you put on it is most important!
I hope this helps a bit.
